Healthy banana muffins!

My first post! yaay :D Ok, so I just made banana muffins! And they are low fat and low in calories too! They turned out DELICIOUS and soooo moist. The first bite was like heaven ..
These are very healthy and filling, great for breakfast!

The recipe!
(this recipe can easily be doubled)

HEALTHY BANANA MUFFINS (small batch)

1/2 cup sugar*
1/8 cup + 1 teaspoon low fat yogurt (or oil if you don't care if its healthy or not)
1/2 tsp baking soda
1/4 tsp salt
1 egg
3/4 cup whole wheat flour (you can use all-purpose)
1 large banana (190-200g), mashed (or more or less if you like)
1/2 tsp cinnamon (optional)
1/2 tsp vanilla extract (optional)


Directions
1. Preheat oven to 350 F or 176 C.
2. In a medium bowl, combine sugar, yogurt, baking soda, salt, and egg.
3. Slowly add the flour, then the mashed banana and mix until well combined. (Don't over mix)
4. Mix in the cinnamon or vanilla if using.
5. Arrange cupcake liners in muffin tin or grease muffin pan with cooking spray if not using liners, and fill muffin cup with batter about 1/2 to 3/4 full.
6. Bake for 20 to 25 minutes or until a toothpick inserted comes out clean.
7. Let cool about 15 to 30 mins before serving. Enjoy! (Those are even better the next day!)

*Feel free to use sugar substitute such as splenda or stevia for a low sugar muffin, or honey or maple syrup, but the nutritional info will change.
